Job Description
Key Areas Of Responsibility- Meal preparation, presentation, distribution, serving period and sanitation standards
- Area presentation, organization cleanliness, sequence and production flow, revenue and cost allocation, administration, payroll and training of team
- Menu presentation and pricing, menu and service style and presentation, menu coordination and balance, in room systems and quality tracking
- Equipment review and audit, inventory schedule and reports, equipment and areas maintenance update and reports, operating equipment inventory and ordering suggestive process, customer service programs for all segments to better comments and utilization revenue
- Responsible to ensure all operation policies and standards of Food Services are applied to its highest application
- Holds daily Meetings with Kitchen/Service teams, operations work flow/In room Movement diet requirement, brief and debrief all staff on the job to be done/feedback of work responsibilities and on the job daily training.
- Reports daily to support services manager and coordinates with Dietician in all aspects of patient meal flow
- Interact daily with Dietician /Support Services/Customer care/ Nursing Manager at the hospital with matters related to Food Services
- Responsible to ensure that an opening checklist is followed and audited that covers all cleanliness and service/production task list
- R&M daily walk and weekly work schedule with follow up to ensure best maintenance.
- Co-ordinates presentation of Caf counter menu and controls on day to day basis with the Chef/Kitchen Executive at site
- Caf & In Rooms menu presentation, coordination and production process that includes catering packages and medical seminar packages
- Daily food tasting and presentation control with auditing reports to ensure brand standards are strictly adhered
- Weekly and monthly training schedules planning to ensure customer care and service is our brand image. This will include fire, safety, evacuation, infection and waste management
- Monthly operational Report/ Review with Support Services
- Responsible for getting daily feedback from In-Patients, Caf guests Internal and External
- Responsible for efficient running of In-Patient/ Caf and other related Food Service operations at the hospital
- All suggestion, complaints regarding Meal ad Services are channeled through him/her with a monthly report and action plan to indicate situation
- Responsible for Caf inventory and controls at the hospital (cost control system, breakages, food cost, P&L report). Enforce discipline and operating standard at his worksite
- Maintain records and generate reports of all Meals served and extra catering services provided that contributes to F&B revenue thus justifying cost of sales/operations
- Authorized and control all procurements from approved vendors and sanction daily requisitions as per the approved budget
And any other task that has been assigned on a day-to-day basis
